You must have a deep freeze large enough to keep your beef in. A whole carcass is generally more than what will fit in a single full-size upright freezer while a half will fill about 3/4 of the same freezer. The meat will keep in a good deep-freeze for well over a year. It is hard to say how much meat will be used in a year but from our experience an average family of 4, who uses beef about 2-3 times a week, will go thru a half carcass in about a year. So buy a whole carcass and split it amongst your family. It makes a great gift!
